|bacon, egg, and cheese cups

So I am a breakfast person. Breakfast food will always be my favorite kind, because it is basically perfect. Anyway, tonight I was hungry and wanted a breakfast food for dinner. I remembered this recipe that I stumbled across a long time ago and have had bookmarked for ages hoping to one day make it. |
TODAY WAS THAT DAY
So the recipe for bacon, egg and cheese cups is REALLY EASY I found out. You're basically just making biscuits and putting the filling in them.
for the crust:
2 ½ cups flour
2 ½ tsp baking powder
½ tsp salt
1 TBSP sugar
½ cup butter, melted
½ cup milk
1 egg, lightly beaten
for the filling:
3 oz. cream cheese
1 cup milk
1 lb. bacon, cooked and crumbled
1 ½ cup shredded cheddar cheese
to taste: hot sauce, garlic powder, onion powder
1. In a large bowl, whisk or sift together flour, baking powder, salt and sugar. Cut in butter until crumbly. Stir in milk and egg until dough comes together. Knead a few times by hand and set aside.
2. Whisk eggs in a large bowl. Stir in cream cheese and milk until smooth. Add other ingredients and stir to combine.
3. Using about 2 T. of biscuit dough at a time, press into the bottom and about three quarters of the way up the sides, of lightly greased muffin tins. Pre-bake at 400 degrees for 3 minutes.
4. Pour ¼ cup egg mixture into each pre-baked biscuit cup and bake for 12-15 minutes longer, until eggs are completely set and biscuit cups are slightly browned.
Although I only had one muffin tin and I guess you're supposed to make more than 12 of these things. I had TONS of the filling left over and my biscuit/cups were probably bigger than they were supposed to be, but they turned out fine, I thought. I just used the extra filling to make scrambled eggs to eat while I waited for the cups to bake because I'm a fatass.
So, here are what mine looked like when they were done:
There should be more filling and less biscuit but they taste great. My brother (who is also big on breakfast food) will probably consume all of them within the hour.
Overall they turned out really well and I really am glad I made them. I would like to make them again sometime when my parents are home (they are away for the weekend) because I think they (especially my dad) would really like them as well.
I also want to make them again to try and perfect them. I will be perfect.
Really though - if you're competent at cooking and think this sounds appealing then you should try it. Bacon, egg and cheese is my favorite kind of breakfast sandwich ever so this was basically just a new way to make one of my favorite foods. It was a really simple recipe and was really good.
Also, I don't know why I don't post more of the random recipes I make on this COMMUNITY THAT IS PURELY ABOUT FOOD. Maybe I will next time I make something new. I love making desserts especially. I want to make a pie soon.
